Some date this delicacy back to the end of the 1100s when the first almond paste, made of water, sugar and almonds, was prepared in the Martorana convent in Palermo by its founder, Eloisa da Martorana. However, others argue that one of the specialties par excellence of the Sicilian pastry art originated much earlier, even in the 3rd century BC, when sugar began to spread to Rome thanks to maritime trade with the Indians and Persians. Our almond sweets are obtained from the mixture of sugar and the authentic flavor of Sicilian almonds.
