Fiore di Sardegna is made from rich, whole sheep’s milk aged 4 months, creating a firm, dense texture. The flavor starts off buttery and nutty and finishes with a subtle sharpness. The mildly-sheepy flavor has aromatic notes reflecting the indigenous herbs and grasses, which the sheep graze on. A wonderful alternative to Basque Ossau Irraty or Spanish Manchego.
